Pumpkin Sugar Cookies

I love making sugar cookies every holiday. Here is a twist on the batter for Halloween. Or you can always go with my classic simple dough. Get Halloween cookie cutters and a good selection of sugar sprinkles in fitting colors.



Prepare dough the night before:

  • 1 stick butter, room temperature
  • 1 cup sugar
  • 1 egg
  • 1-1/2 tsp. vanilla extract
  • 2 cups flour
  • 1/4 tsp. sea salt
  • a tsp. all spice
  • 1/4 tsp. nutmeg
  1. Cream together butter and sugar until smooth. Beat in egg with fork until light. Add vanilla extract.
  2. In another bowl combine dry ingredients.
  3. Add dry ingredients to wet ingredients blending with rubber spatula.
  4. Cover and refrigerate over night.

The next day:

  1. Preheat oven to 375 degrees.
  2. Cut off a piece of dough and roll out on a floured dry surface. Add more flour to the dough until no sticking occurs.
  3. Use your favorite cookie cutters than transfer shapes to a greased cookie sheet.
  4. Brush raw egg white onto the cookie and decorate with sprinkles.
  5. Bake seven to ten minutes, watching carefully.
