Turkey Crouton

This is an idea gotten from Jeanne Omlor whose past Christmas feast was an inspiration to my own. All it took was sliced free range TURKEY BREAST placed on top of a BIGETTE slice (I used day old bread but Jeanne toasted hers crisp), brushed with HERB OLIVE OIL, and cranberry relish to top it off. I assemble them as I go.

Herbed Olive Oil:
In a small jar put
1/2 cup olive oil and your favorite dried herbs being sure to crunch them between your fingers to release the flavor. This year I used rosemary, parsley, and oregano. Every so often give it a shake, especially before using.
