This soup is so warming on a cold day. A colorful dish to get through the grays of winter. I frequently put some leftover spinach & bean recipe into this soup


In a soup pot put:

  • 1 cup of dry YELLOW PEAS
  • 4 cups of WATER

Bring to a boil and lower the heat to a simmer. Add:

  • 1 chopped CARROT
  • 1 chopped ONION
  • 1 chopped POTATO
  • Season with BAYLEAF, SEA SALT & PEPPER (black or red), fresh PARSLEY. Use a vegetable bouillon if needed for more flavor.

Keep simmering until all is tender and a nice consistency has been achieved. Sometimes I puree it in the blender.
