Banana Walnut Bread
Banana Bread never gets old. Do you ever have a few bananas around that are going bad. Don't waste them, turn them into a bread that is so easy there is no excuse not to treat yourself. My son likes to substitute the walnuts for chocolate chips. So do I!

• 1 stick BUTTER, room temperature
• 1 cup SUGAR
• 2 EGGS
• 1 cup mashed ripe BANANAS (3 medium) or plantains (2 regular)
• 2 cups FLOUR
• 1 teaspoon BAKING POWDER
• 1/2 teaspoon BAKING SODA
• 1/2 teaspoon SALT
• 1/2 cup chopped WALNUTS

• Sift flour, baking powder, soda and salt into bowl. Set aside.
• In a larger bowl cream the butter and sugar together.
• Add the eggs and mashed bananas until thoroughly blended.
• Add the dry ingredients
• Turn into a greased and floured 9 1/2 x 5 1/2 dish and bake at 350°F for about 1 hour. When you can put a toothpick in the middle and it comes out clean the bread is done.
