Curry Turkey Salad

This salad can also be made with chicken. It is colorful and makes any meal festive. I often make it the day before so the flavors really blend.

Take the leftover TURKEY (or CHICKEN), chop it into small pieces, and mix it with RAISINS, thinly chopped CARROTS, and MAYONNAISE. Season with CURRY powder, SALT & PEPPER to taste. Let sit in the refrigerator for at least an hour before eating if you can.

Use the bones to make soup stock!
