Pumpkin Pie

This pumpkin pie isn't scary at all. It is easy, especially if you get a pre-made pie crust from your grocers freezer section. Or get brave and roll your own.

Mix the ingredients below in order shown to prepare the pie filling:

• 1 cup PUMPKIN PUREE
• 2 EGGS, beaten
• 2/3 cup CREAM
• 1/2 cup DARK BROWN SUGAR
• 1 tsp. CINNAMON
• 1/2 tsp. GINGER
• 1/4 tsp. NUTMEG
• dash of CLOVE

Pour filling into a pie crust. Bake in a preheated oven at 375 degrees for 45 minutes.

To make pumpkin puree is easy. Just steam pumpkin until tender. Cool and throw in food processor or blender until smooth consistency is achieved.

For those who want to roll their own. (crust that is)

Two Crust Pie:
• 2 cups sifted FLOUR
• 1-1/2 teaspoon SALT
• 1/2 cup VEGETABLE OIL
• 1/4 cup cold WHOLE MILK

• Mix together flour and salt.
• Pour milk into a measuring cup with the oil, don't stir.
• Pour into flour and salt mix forming a ball.
• Cut into halves and roll out on well floured surface. Easy!
